- Using a box grater or food processor, grate cauliflower as finely as possible. No need to precook or drain water out of the cauliflower! 
- Transfer to large mixing bowl, add rest of ingredients and mix delicately with fingers until well combined. 
- Form into 15 patties. Tip: Using ice cream scooper makes job much easier. 
- Heat virgin olive oil in frying pan set over medium heat and cook fritters 6-8 at a time for 2-3 minutes on each side, until golden brown; keep warm while you cook remaining fritters. 
- Serve warm, garnished with generous dollop of Walden Farms mayo and a few slices of jalapeno.
